Just want to check before I potentially screw up the ABS pump.
Is it ok to just wind back the brake calliper pistons or do I need to clamp the flexible hose & open the bleed nipple?

Never clump flexi hose. Just open the reservoir under the bonnet and wind back the piston. Usually it is easy, but if seized, then order a new caliper.
I was replcing the break hoses a few years ago with those teflon ones covered with stainless steel pleating, and in order to prevent fluid loss just put a stick between the seat and brake pedal. If planning to have the line disconnected for a long time, then prepare a plug or cup of some sort.
