These parameters can be recorded with any OBD interface connected to a laptop. I use ELM327 (£20 on ebay) and ScanMaster software, which comes with it. Just select all parameters available for this engine, start recording, then start the engine, idle for a while, rev it a few times, then drive, then stop recording. Once it is done, plot the data either with the same tool or Excel (free OpenOffice is OK), print to PDF (e.g. free bullzip PDF printer driver) and post it here. If you don't want to post it, then show it to someone with knowledge in engineering and use the manual (MR366MEGANE1.pdf MR364MEGANE1.pdf files in the sticky thread above) for reference.

The diagrams, for example, may show inconsistent temperature readings, which will cause the ECU to stay in the warming up mode (rich mixture - smell), or may show increased calculated load at idle, which is a characteristic of dirty throttle body. O2 sensors may be playing up, the MAF sensor may be giving inconsistent readings due to air leaks or blockages, etc.

One more idea. Disconnect the dephaser valve temporarily. Your engine is supposed to idle normally without it and the car will drive fine in low revs. If an improvement is detected, then you'll know where to look for a fault. BTW, are you sure that the timing was done properly when changing the dephaser? Most garages employ people who don't read the manuals...
